Salt Bread (Shio Pan), Baked Fresh Every Day

Salt bread, shio pan, Korean salt bread: three names for the same roll. A crisp, salt-flecked crust, a soft chewy crumb, and a pocket of melted butter in the middle that pools at the bottom while it bakes. We bake them in small batches all day in Bellevue, in the classic and a dozen flavors, from $4.

Butter in the middle

A stick of butter is rolled into the dough. It melts out while baking and fries the bottom crisp.

Baked through the day

We bake in small batches so there is usually a warm tray out. When a flavor sells out, it is gone for the day.

Classic to Dubai chocolate

The classic is always there. Flavored and seasonal rolls rotate.

Flavors and prices

The classic is $4 and most flavored rolls are $6. The lineup rotates with the season, so a few flavors come and go.

  • Classic sea salt, the one to start with
  • Garlic butter, crème brûlée, pork floss, ube taro, Earl Grey, Dubai chocolate
  • Seasonal: hojicha cream, pumpkin cinnamon, mentaiko, strawberry, ham and cheese, jalapeño cheese

Combo boxes bundle a few rolls with a drink or dessert at a lower price. They are on the bakery menu next to the single rolls.

How to order

  1. Order online from the bakery menu and pick a pickup time at least 24 hours out, or just walk in. We bake through the day until we sell out.
  2. Pick up at 1805 136th Pl NE, Suite 104 in Bellevue. Delivery is available in the cart for larger orders.
  3. Best the day it is baked. The next morning, 3 to 5 minutes in an air fryer or toaster oven brings the crust right back.

Questions we get a lot

What is salt bread?

Salt bread is a small crescent roll made from a lean, slightly chewy dough wrapped around a piece of butter and topped with coarse salt. As it bakes, the butter melts out and crisps the bottom. It started in Japan as shio pan and spread across Korea and Taiwan.

Shio pan vs Korean salt bread: what is the difference?

Shio pan is the Japanese original: a plain, chewy roll with a clean salted crust. Korean salt bread (sogeum-ppang) is the same roll as it became popular in Seoul cafes, usually a little softer and often filled or topped, which is where flavors like garlic butter, crème brûlée and pork floss come from. We bake the classic Japanese way and offer both styles of flavors.

What time is it freshest?

We bake through the day. Late morning and mid-afternoon are the best bets for a warm one. Call ahead if you want a specific flavor.

How do I reheat it?

3 to 5 minutes in an air fryer or toaster oven at 350°F. Skip the microwave, it makes the crust soft.

Can I order a box for the office?

Yes. Order online with a pickup time at least 24 hours out. For a dozen or more, use the catering page and we will pack them for you.

Do you ship salt bread?

No. It is best within a day of baking, so we only sell it in the shop and for pickup.
